Using co-immobilized saccharifying enzymes and yeast fermentation of high-concentration cassava starch mash to produce alcohol

Alginate aluminum is used as a carrier to immobilize yeast cells and glucoamylase,and high-concentration cassava starch is used as a raw material to produce alcohol by saccharifying and fermenting simultaneously.The main factors affecting fermentation are studied,and the optimum conditions are acquired as follows: alginate aluminum-to-solution rate: 50%,glucoamylase: 300U/g,wet yeast: 2.5 g,fermentation temperature: 37 ℃,pH value: 4.0~4.5,solid-to-liquid ratio: 1:2.0,ammonium sulfate: 0.50 g/L,magnesium sulfate: 0.20 g/L,potassium dihydrogen phosphate: 0.10 g/L.Under these conditions,the alcohol content of high-concentration mash reaches 13.4%,and the starch utilization rate reaches 90.2%.
