The Application of Rheological Characteristics of Xanthan Gum

Xanthan gum has a peculiar rheological characteristics,evident change for viscosity to varied, shearing rate.It is a typical pseudoplastic liquid.Its viscosity increased by the concentration going up, and shows a linear relation.The viscosity is not affected by the pH 4 to 10,and decreased by the heating abov~ 80℃.It had a viscosity-increasing efftct when mixed with CMC-Na.
