Methods and progress on the research of tea enzymes

Researches on enzymes of tea in terms of the methods and their applications as well as the trends were reviewed and discussed. Recently, the methods, technical or ideological, have been so much developed and extended that the progress has been speeding in exploration and utilization of both internal and external enzymes, in inquisition into the relationships between genetic characters and enzyme behaviours, in chemical and environmental regulation of enzymatic activities and in extension of the utilization of enzymes in the natural state to that of specially treated and improved ones.
