The fresh keeping technology of partial freezing for coated large yellow croakers

Effects of coating treatment on the quality of large yellow croaker under a partial freezing condition at -6~-3 ℃. The results showed that the shelf life of large yellow croakers could be extended up to 30 d. Coating treatment not only had a significant effect on maintaining the appearance of large yellow croakers, but also could reduced the total bacterial count and T-VBN value of large yellow croakers. However, coating treatment had a higher K value than the control.
