Negative Effect of Vegetable Oil Rich in PUFA and Cultivar Improvement of Oil Plants

This paper reviewed the present situation of edible vegetable oil and the epidemic of main chronic disease,a potential negative effect caused by over eating of vegetable oil which was rich in polyunsaturated fatty acid was elucidated based on several aspects including the composition of fatty acid in vegetable oil,the metabolism of n 3 and n 6 fatty acid,as well as the lipoid peroxidation.Furthermore,the new trends for improvement of the composition of fatty acid for main species of oil crops at home and abroad were emphasized and proposals for the rational eating of vegetable oil and fats were offered.
