Extraction of Polyphenol from Lotus Roots and Its Enzymatic Browning Substrate

WANG Qing-zhang~*, PEN Guang-hua , JIN You, LI Jie , YAN Shou-lei (Department of Food Science and Technology,Huazhong Agricultural University, Wuhan 430070)  
Phenolics were isolated by TLC and HPLC from lotus roots and identified as dopa, catechol, gallic acid, D-(+)-catechin and L-(-)-epicatechin.Polyphenoloxidase(PPO) activity in lotus root was also estimated, and the results showed the optimum substrate of the PPO was gallic acid.
