Application of Chitosan in Storage and Freshness Preservation of Fruits and Vegetables

Chitosan is a natural high molecular compound with the characteristic of non-toxicity,safety,easy membrane formation and antibiosis,and is widely used in storage and freshness preservation of fruits and vegetables.The paper reviews the membrane formation characteristic and antibiotic action of chitosan and its application in storage and freshness preservation of fruits and vegetables,and forecasts the development prospect to provide a reference for development and utilization of chitosan.
