Hot air drying process of Chinese water chestnut peel and its effect on antioxidation capacity

Hot air drying was adopted to evaluate the drying characteristics of fresh Chinese water chestnut peel and its change on antioxydation.The drying curve under 80℃ was analogous to that of 90℃,while the curve under 70℃ wais more unliked.Least squares polynomials were used to match the drying process under different temperature.The result showed that all the R2 values of the mathematical models were greater than 0.99,it illustrated that all the mathematical models were significant.The materials' ability of eliminating hydroxyl radical was drooping along with the drying process,higher temperature and longer drying time would lead to more obvious result of that.The antioxidation capacity decreased slowly during the early stage of drying and sharply during the late stage.
