Research progress on microencapsulation technology application in the food industry

The microencapsulation technology could solve many problems which could not be solved by the traditional process,and it could produce new products with good functionality and storage stability.The review described the technical characteristics of the microcapsules,the role of commonly used preparation principle and its applications in the food industry,and finally pointed out the problems and development prospects of microencapsulation technology.
