STUDY ON DEGRADE CHARACTERISTICS OF CORN STARCH WITH NON-CRYSTALLIZED GRANULE STATE BY MICROORGANISMS

Using the light microscope analytical method, degrade process of corn starch with non-crystallized granule state by microorganisms was investigated in detail. It is found that amorphous structure and blowing out poles of starch with non-crystallized granule state greatly increased degrade reaction activity of microorganisms. From the beginning of blowing out poles of starch granules, starch granules are degraded deeply by the microorganisms along blowing out poles to completely disappear. Native starch with compact crystallized structure, because of without poles on the surface of starch granules, organisms degrade activity is much lower than that of starch with non-crystallized granule state.
