AFM Probing on the Microstructure of the Starch and the Starch-Iodine Complex

The morphological structure of starch and starch-iodine was investigated by using atomic force microscopy(AFM) techniques.The results show that the starch interlinks into one-layer helical superamolecular at the content of 0.16012 g/L and appears smoothly.It is certified that the adjacent starch may also be paired under direction of superamolecular recognition and attraction through hydrogen bonding interactions into molecular zipper.Iodine can be absorbed on the surface of supramolecular when added,further be embedded in it.And the morphological structure changed on the surface—the smooth surface became netlike(the grid height was 5 nm),and the pitch changed to 700 nm.It is estimated that there are 5×107 of iodine molecules at each pitch.
