STUDIES ON THE PHYSIOLOGICAL AND BIOCHEMICAL CHANGES DURING THE DEVELOPMENT OF THE "FUJI" APPLE FRUIT

With the "Fuji" Fruit development, each content of the total soluble sugars, fructose, sucrose and glucose in the fruit changed dramatically. The tolal soluble sugars, sucrose and fructose had two rapid accumulated periods. The starch accumulation in pre-period had a certain influence on the fruit sugar content at harvest. The invertase activity was negatively correlated with the sucrose accumulation, and the amylase activity was negatively correlated with the starch accumulation. Fruit soften in the last stage had little or nothing to do with pectinesterase (PE), polygalacturonase (PG) was the main enzyme in fruit soften. We consider that the sugar content and color area of the fruit should be used as the main biological indexes for determining the optimum harvest time of the "Fuji" apple, and that the acid content and firmness be used as the main referential indexes.
