Improved Method for Detecting Lipoxygenase Activity From Kiwifruit and Peach Fruit

Ripening kiwifruit and peach fruit were used to establish the improved method for detecting lipoxygenase(LOX)activity.Using linoleate as substrate,the suitable pH in the measurement system for kiwifruit and peach fruit was5.0~5.5and6.0,respectively.The desirable results could be obtained to use the improved method to detect LOX activity in postharvest ripening fruit tissue treated by ethylene and ethylene absorbent.
