Parameters of steaming treatment before dehydration on day-lily flowers

The techniques of steam treatment before dehydration on day-lily flower were studied in this paper.The optimal time and temperature of steam treatment were determined by testing the activity of peroxidase,the ratio of browning head,the contents of vitamin C,protein and reduced sugar,and qualitative of colchicine.The results showed that steam treatment at 95 ℃ for 60 seconds could inactivate peroxidase,lower the ratio of brown-head,destroy colchicines.The products have less nutrient loss,normal texture and safer than that treated with SO2.
