Extracting Fructose from Jerusalem Artichoke with Method of Acid Hydrolysis

HU Jia-qi, GAO Hai-bing, ZHOU Ming-da (College of Chemistry and Chemical Engineering,Central South University,Changsha 410083,Hunan,China)  
Inulin was extracted from Jerusalem artichoke by hot water lixiviating,and then turned to reducing sugar (fructose mostly) with the method of phosphoric acid hydrolysis. The effects of the ratio of solid to liquid,abstracting time and temperature,hydrolyzing time and temperature, pH of inulin solution on the yield of reducing sugar were investigated. The optimum condition was as follows:ratio of solid to liquid 1∶30, abstracting time 30 min, abstracting temperature 80℃ , hydrolyzing time 30 min,hydrolyzing temperature 80℃,pH=2. The satisfactory results were obtained.
