DETERMINATION OF ALLIIN AND GARLICIN IN GARLIC BY HPLC

TAN Zhi-jing(Anhui Science and Technology College,Fengyang 233100,Anhui)  
For accurately,rapidly and conveniently determining alliin and garlicin in garlic,reversed-phase high-performance liquid chromatography(RP-HPLC) was employed with column of waters symmetry C18(4.6mm i.d.×150mm,5μm),detector in wavelength of 214 nm for alliin and 254 nm for garlicin, and mobile phase of methanol :water(30 :70) in the flow rate of 0.8ml / min.The results show that alliin is within 0.01~0.35mg/ml,in good linearity with correlation coefficient of 99.6 and average recovery of 99.85±1.53 %
