Risk Assessment of Vibrio parahaemolyticus in Meretrix meretri

The risk of eating Meretrix meretri from aquatic wholesale market to retail market was assessed based on the Codex Alimentarius Commission's Framework for Theory of Microbiological risk assessment.It predicted that the average value of food-borne illnesses caused by Vibrio parahaemolyticus from eating fresh Meretrix meretri was 4.26 E-7 per capita in every year.The probability of a harmful effect to populations from Meretrix meretri barbecue was also quantified and results showed that this edible method did not cause obvious risk.
