Evaluation of Nitrate and Nitrite Contamination in Spring Vegetables in Kaifeng's Market

Content of nitrate nitrogen and nitrite nitrogen of 32 kinds of vegetables,Class 7,a total of62 samples were collected randomly in the main vegetable market of Kaifeng city in April- May 2010. The nitrate and nitrite content were measured and food risk has Benn evaluated. The results showed that leafy vegetables with higher content of nitrate,the average is 497. 64 mg·kg- 1,followed by beans melons and root vegetables. The Nepeta leafy vegetables was moderately polluted,and the rest were slightly polluted,the level of nitrate content in vegetables sample is in order,leaf vegetables onion garlic class legume vegetables edible fungi vegetables egg plant vegetables root class melon vegetables. The highest nitrite content of Vegetables is 4. 07 mg · kg- 1,the order of the average content of nitrite was legume vegetables onion garlic class egg plant vegetables root class melon vegetables leaf vegetables edible fungi vegetables. The nitrite content of the all samples the other samples were not excessive the National standard( GB18406. 1- 2001),except the mature red robe pepper Solanaceae. Comparing the content of nitrate and nitrite with those of other cities,the content of nitrite in vegetables in Kaifeng City were higher.
