Submicrocrystalline Structure of Starches

The submicrocrystalline structure of corn starch granules and pregelatinized starch is studied by wide_anger X_ray diffraction. This type of crystalline structure has not been reported before. It is concluded that the crystalline domains in the native starch consist of crystal, submicrocrystal and amorphous structures. The X_ray diffraction patterns characteristic of crystalline structure, sub_crystalline structure and non_crystalline structure are also presented.
