Research Development about Polyphenol Oxidase and Peroxidase in Tea

According to recent ten years research reports of ployphenol oxidase (PPO) and peroxidase(POD) in China and abroad,this paper has systematically expounded rules of PPO and POD in lively tea tree and their physiology and heredity in black tea manufacture.
