Starch Granule Size Distribution in Superior and Inferior Grains of Wheat

The starch granule size distribution in the superior and inferior gains of winter wheat was studied using two winter wheat cultivars(Lumai21 and Jinan17) with different starch contents in field trials located in Tai'an experimental locations of Shandong province during 2005-2006 growing season.The results showed that both superior and inferior grains contained three types of starch granules: smaller C-type granules with diameter 2.0μm,medium B-type granules with diameter 2.0-9.8μm and large A-type granules with diameter 9.8μm at maturity.In superior grains,the starch granule volume and surface area presented a typical three-peak distribution,while they exhibited a two-peak curve in inferior grains.The volume% and surface area% of C-type starch granules were 7.25%-8.01% and 34.88%-37.21% respectively in superior grains,and 5.33%-6.35% and 26.31%-33.19% respectively in inferior grains,indicating that the rate of C-type granules was higher in superior grains than in inferior grains.Significant diffe-rences were also seen between the superior and inferior grains for number% of starch granules with the ranges of 0.6μm and 0.6-2.0μm.The number% of 0.6μm in inferior grains was 36.21%-37.41%,and that of 0.6-2.0μm in superior grains was 84.38%-87.76%.
