Determination of Capsaicinoids by High Performance Liquid Chromatography

ZHU Shu-ping,LI Tian-bao(College of Chemistry and Chemical Engineering,Hunan Normal University,Changsha 410081,China)  
The determination of the major capsaicinoids which are in pepper was studied by means of high performance liquid chromatography(HPLC).Chromatography separating conditions of capsaicinoids were investigated.The experimental results showed that the major capsaicinoids can be separated from one another by HPLC.The HPLC system was consisted of Hypersil ODS C_(18)(5 μm,250 mm×4.6 mm) and UV detector set at 280 nm.The mobile phase was φ_(CH_3OH)/φ(φ_(H_2O)/φ_(H_3PO_4)=100/1)=11∶9 with a flow rate of 1.0 mL/min.The temperature of determination was 35 ℃.
