Content and Edible Safety Evaluation of Nitrate and Nitrite in Vegetables Sold in Hangzhou

In this study,the contents of nitrate and nitrite in vegetables sold in Hangzhou were investigated,and the edible safety evaluation was also carried out.The results showed that the nitrate content varied significantly in vegetables sold in different urban areas of Hangzhou,the nitrate content in different categories of vegetables was ordered by leafy vegetables,onion garlic vegetables,roots vegetables,melon vegetables and solanaceous vegetables.However,no obvious difference was found about the nitrite content in vegetables sold in Hangzhou,no nitrite could be detected in vegetables sold in every district of Hangzhou,and the nitrite content detected in vegetables was always less than 1.0mg/kg.Edible safety evaluation results showed that the nitrate content in roots vegetables,melon vegetables and solanaceous vegetables sold in Hangzhou and the nitrite content in all vegetables were within the limit of edible safety,but the nitrate content in leafy vegetables was not safe enough.Therefore,much attention should be paid to the edible safety problem of nitrate in vegetables sold in Hangzhou.
