The Preparation Technologies and Analysis Methods of Capsaicinoids

As the biological acitive component of pepper, capsaicinoids have a lot of uses in the field of military and medicine. In this paper, the structure properties and applications of capsaicinoids are introduced, and the ways of separation(i.e. solvent extraction, supercritical extraction, microwave extraction) and purification(i.e. solvent extraction, ion-exchange, column chromatography, supercritical CO_2 extraction) are discussed. Furthermore, the qualitative and quantitative analysis methods are described and the prospect of capsaicinoids are viewed.
