Preparation of Cation Starch from Maize Starch

LU Zhen-xian(Zhejiang TV University Fuyang College,Zhejiang Fuyang 311400,China)  
Utilizing maize starch and adopting half-dried method,cation starch with high exchange degree was prepared.The factors affecting the exchange degree and properties of the product were investigated.The optimum reaction conditions were: reaction temperature,90°C;reaction time,(2.5) h;pH value,8~11;isopropanol:water(volume ratio),3∶7.The exchange degree reached(0.55),and the yield was 94%.
