High Performance Liquid Chromatography and Liquid Chromatography-mass spectrometry used for Health Care Food Analysis

Applications of high performance liquid chromatography(HPLC) and liquid chromatography-mass spectrometry(LC-MS) techniques for the determination of nutritious substances in health care food were reviewed.As nutritious substances vitamins,polyunsaturated fatty acids,carotenoids,polysaccharides,saponins and flavonoid compounds were specifically discussed.
