Analysis of fatty acids in Stomolophus meleagris prepared with different methyl esterification methods by GC-MS

Objective The fatty acids composition in five different parts(umbrella、oral arms、tentacle、sarcenet and gonads) of full-grown Stomolophus meleagris from the Yellow Sea was investigated.Methods The fatty acids were extracted and their components were analyzed by gas chromatography/mass spectrometry (GC/MS),using three methods of methyl esterification including acid-catalyzed method,basecatalyzed method and Diazo(trimethylsilyl) methane method.Results The results showed that there were 44 kinds of fatty acids in Stomolophus meleagris,percentages of polyunsaturated fatty acids(PUFA) were high,(docosahexaenoic acid(DHA) 3.13%~13.97%,eicosapentaenoic acid(EPA) 1.13%~28.81%and eicosatetraenoic acid(AA) 3.62%~27.53%).The compositions and percentages of odd and branched-chain fatty acids in the saturated fatty acids were high,7.63%~41.67%.Conclusion The compositions and percentages of the fatty acids in the same part using three methods of methyl esterification are different,the compositions and percentages of fatty acids in different parts are also different. The fatty acids of Stomolophus meleagris have high nutritive value.
