Preparation of Defatted Corn Gluten Meal and Its Hydrolysis Technology

Judged by reduction of fat,the best pre-treating technology of 1 g corn gluten meal was determined:raw material was treated with 16 mL 40 g/L sodium carbonate solution at 40℃ for 10 min.After pre-treating,corn gluten meal was hydrolyzed by an alkaline protease to produce various corn peptides with certain degree of hydrolysis.According to the method of pyrogallol autoxidation,the peptides with 30% degree of hydrolysis were selected as the best product: 0.06 mL alkaline protease catalyzed 1 g corn gluten meal at 50℃(pH 8.0) for 4 h.
