Study on Anti-Oxidative Activity of Small Molecule Products from Soybean Protein by Proteolysis

Small bioactive peptides(SBP) were prepared from soybean isolated protein by proteolysis with an alkaline protease,at 50℃ and pH 8.0.The anti-oxidative activity of the hydrolysate was examined by the method of pyrogallol auto-oxidation.The average molecular weight of anti-oxidative peptides was about 800 Daltons.It was found that the SBP had obvious inhibition efficacy to auto-oxidation of pyrogallol and the inhibition rate reached 33.3% while the concentration of SBP was(1 mg/mL).Compared with the anti-oxidative activity of GSH,SBP had a similar anti-oxidative capacity.
