Preparation of Starch Octanoate and Its Emulsifying Properties

The starch octanoate(St-C8) with different degrees of substitution(DS) was synthesized by corn starch and octanoyl chloride in the organic solvent.The structure of St-C8 was identified by an infrared spectrum.Moreover,the St-C8 was used as the emulsifier of soybean oil and water system.The effect of DS,the emulsifier of quality score,the proportion of oil phase,the water phase(V(oil)∶ V(water)) on the emulsibility and the emulsified stability of emulsion were also investigated in detail.The result indicated that the St-C8 exhibited the best emulsibility and emulsified stability when the DS and the quality score are 0.37 and 7%,respectively.Furthermore,the emulsion exhibited the best emulsibility and emulsified stability when the V(oil)∶ V(water) is 4∶ 6 and 2∶ 8,respectively.
