Research Progress on Capsicol

An Zhongli He Zhifei Li Hongjun Jia Hongfeng(College of Food Science,Southwest University,Chongqing 400716)  
Capsicol is a traditional condiment oil,it's very popular because of its good color and smell.Its chemical composition characteristics,processing techniques and some factors affecting its quality were presented.Furthermore,its current production situation and its development prospect were analyzed.
