Research advance on modification of dietary fiber

ZHU Guo-jun ZHAO Guo-hua (College of Food Science,Southwest University,Chongqing 400715,China)  
Many research datum indicated that modified dietary fiber has a lot of evident advantages in its physiochemical properties and physiological functions.Application of chemical treatment,mechancal treatment,fermentation and enzymatic hydrolysis to modify dietary fiber,and developmental perspec- tive of modified dietary fiber were reviewed in this paper,to provide some references for the future research and development of dietary fiber.
