Study on the properties of high-transparency oxidized waxy maize starch

Compared with its native starch,the physicochemical properties of oxidized waxy maize starch were studied,such as granule morphology,polarization properties,transmittance and retrogradation. The results indicated that In the same oxidation reaction conditions,carboxyl content of oxidized waxy maize starch was lower than that of oxidized normal maize starch;granule morphology of oxidized waxy maize starch was similar with waxy maize starch,polarized light is clear,and oxidation occurred in amorphous region;granule surface of oxidized waxy maize starch was more rough,with the quantity of micro holes increased,oxidation occurred at both surface and inner of granule,and degradation took place on granule surface. Compared with its native starch,oxidized waxy maize starch showed a higher transparency,but similar retrogradation.
