Application progress of tea polyphenols in the field of food industry

HU Si;LI Hua;LU Qi-yu;College of Food Science and Technology,Henan University of Technology;  
Tea polyphenols are natural and efficient food additives. This article introduced the application of tea polyphenols in the field of food industry,which included oils and fats,meat and aquatic products,fruit and vegetables,functional food,pastries and candies,eggs and so on. Action mechanism and problems in the application were also clarified,respectively. It provided a basis for deep research of tea polyphenols.
