Research progress on antioxidant characteristics of anthocyanin in blueberriy

HAO Zhuan;Key Laboratory for Ecology and Environment of River Wetlands in Shaanxi Provinc, College of Agriculture and Commerce, Weinan Normal University;  
The strong antioxidant activity of anthocyanins in blueberriy, several extraction techniques and processing methods were expounded in order to provide basis for improving the utilization rate of blueberries and expanding their industrial development.
