Research on the Content of Pentosan in Wheat Grain

LI Chun xi, QIU Zong bo, JIANG Li na, ZHANG Xia (College of Life Sciences,Henan Normal University, Xinxiang, Henan 453002, China)  
The content of pentosan in 8 wheat varieties was determined in 1999~2000. The average content of different varieties varied from 6% to 9%.Significant differences were found in both pentosan content of different varieties and different ecological environment. The average content of Pentosan correlated negatively with thousand grain weight and Falling Number in 5 locations. Whereas pentosan content correlated positively with protein content. So pentosan content was largely dependent on environment and ecological factors. According to Eberhart Russell, the assay of the stability of pentosan content showed that Yumai 34 was a good variety.
