Research on the Technics of Huangqiao Sesame Cake

This paper discusses the processing condition and affective factors of Huangqiao sesame cake. The optimum proportions of dough were investigated. The traditional fill prescription of Huangqiao sesame cake was also studied,and four kinds of filling,radish tiny bit filling,scallion oil ham filling,dried meat flakes filling and sweetened bean paste filling were designed according to nutritional balance principle. The best bake time were also studied.
