Separation and Filtration for Bread Yeast

Su Donghai(Biology Department,Beijing Vocational College of Electronic Science,Beijing 100029,China)  
21strains of yeasts were selected and purified from 27 different traditional steam bread starter. 11 strains of yeasts were screened according to alcohol-producing capability. Three strains(Y3,Y12 and Y16)were obtained when carbon dioxide-producing capability of the strains were studied. Then the fermenting properties of the three strains including fermenting power,high-temperature tolerance,acide tolerance were measured.
