Study on Functional Properties and Application of Insoluble Dietary Fiber from Sauce Residues

In this paper,the functional properties and application of insoluble dietary fiber from sauce residues were studied.The insoluble dietary fiber from sauce residue had good swollen volume,water holding capacity,oil binding capacity,and certain ion exchanging capacity,whereas absorbing nitrite ion increased with time increased.Maximum adsorption of insoluble dietary fiber to nitrites reached 83.24% in 120 min,and the absorbing property was better at acidic condition.The walnut short pastry with insoluble dietary fiber was considered accepted,and the functional status of the samples was greatly improved.
