Investigation on Malting Technology of French PLAISANT Barley

HAN Bao-long(Xuehang Brewery,Tongliao, The Inner Mongolia Autonomous Region 028000, China)  
In view of the high protein content of Fench PLAISANT barley, some points were put forward to advance the dissolvement of protein and ensure the quality of the malt as follows:in the process of malting, enhancement of the steeping barley degree, germination method of lowhigh temperature combination, and increase of the concentration of carbon dioxide in barley layers during later stage of germination,etc.(Tran.by YUE Yang)
