Nitrite and Nitrate in Salted Vegetables and Fresh Vegetables in Winter in Nanjing

Zhao Fu Zhong,et al.(Department of Chemistry)  
The nitrite content of salted vegetables was 16 times of that of the fresh vegetables in Nanjing.Andboth the nitrite and nitrate contents of the main fresh vegetables consumed by the inhabitants were again higher than those of the minor vegetables with its ADI far over WHO's regulation. These results were obtained by examination of 20 kinds of vegetables commonly eaten during winter time. The authors gave a few comments in the discussion.
