The Application of the Selecting Yeast from Vit is Amurensis

ZHAN Jing-juan,JIN Yong-jian (Institute of Vitis amurensis and vitis amurensis wine of changbaishan ,Jilin Province,132506 china)  
For the grape which is a vinification with chinese fearure -vitis rmurensis ,the special growing environment determines its unique quality of grape .High acidity and low sugar leads to the particalrity of enology technique .In relation to the actuality, specially high -resistant titration acidity and low temperarure -resistant yeast have been separated from grapes in different piched period.This yeast separated many times by special culture mediun and tested its performance index has been applied to grapes fermention now.The wine Fermented with the yeast (the yeast has been denominated as chang bai No.1 yeast)possess of quality,flavor,nutrition and resource environment character.
