Survey and outlook of the processing technology of probiotics

The processing technology of probiotics is the keyword of improving the product and enhancing the health function . This paper is a survey and outlook of the processing technology of Probiotics, including spray-drying, freeze-drying, embedding. In spray-drying, it would be improved the probiotics to optimize the craft of parameters , study the heat shock protein and the cellular injuries site and mechanism. The freeze-drying focus the research on cryoprotectant and cool shock protein. The microencapsulation research include improving embedded material, double-coated technology
