Research on the Application of Phosphate Caseinate in Ice Cream

Zhang Gensheng Li Kuan Ye Huaiyi Tong Xiaolin  (Heilongjiang Commercial College) (National Dairy Testing Centre)   
Relacing part of emulisifying agent with phosphate caseinate in ice cream ingredients were investigated,the results showed that,phosphate caseinate applicated in ice cream can improve the expansion rate of ice cream prominently and decrease the hardness of ice cream and improve the texture of products.Its addition was optimized as 0.6% phosphate caseinate, 0.3% sugar ester, 0.2% CMC.
