Factors for Influencing Pork Quality

ZHANG Ke ying, CHEN Dai wen, HU Zu yu (Institute of Animal Nutrition, Sichuan Agricultural University, Yaan 625014, Sichuan, China)  
Pork quality is influenced by many factors such as pig genetics, nutrition and feeding, slaughter conditions. This review summarized the effects of genotypes, sex, age, nutritional level, minerals, vitamins, growth promoters and slaughter conditions on pork quality. This summary will be a reference for establishing comprehensive manipulations to improve pork quality.
