The composition and content of fatty acid of 28 almond varieties from Xinjiang

The methods of super-critical CO 2 extraction was used to get the oil sample of 28 almond varieties from Xinjiang.The contents and composition of fatty acids were tested by gas chromatography.The results indicated that almond averagely contains 54.68g·100g~(-1) fatty oil, among which unsaturated acid is the major component,accounted for 92.3%. Oleic acid, an unsaturated mono fatty acid, constitutes 63.72%-75.89% of unsaturated fatty oil. Linoleic acid, palmoil acid and linolenic acid are in the next place. There were suitable contents between linoleic acid and linolenic acid. So in the view of nutriology, almond oil is a new and higher grade vegetable oil to be developed and used.
