A primary study on the physiological and biochemical changes during sapodilla fruits after-ripening

The contents of organic matters and the activities of anti-oxidation enzymes in flesh and the seeds of ellipsoid-fruit sapodilla had been tested during the period of the fruit after-ripened naturally.The results were as follow: the rate of fruits weight loss was 13.75% and that of seeds was only 1.85%.The contents of soluble sugar and acid and tannic acid in flesh got down at 44.82%,52.07% and 22.18% respectively.The ratio of the total sugar to the total acid(TSS/TA) in flesh was stable.The content of Vc in flesh went up at 35.00%.The contents of soluble sugar and starch in seeds went up at 8.07% and 37.72% respectively.The content of acid in seeds went down at 28.57%.The ratio TSS/TA went up early and then kept constantly.The content of Vc in seeds kept stably.The activities of SOD and POD in flesh had increased 2.6 times and nearly one times respectively,and the activity of CAT in flesh went down from 1 783.80μmol/min to 412.44μmol/min.The curve of the change in the activities of SOD in seeds was W-shaped.The activity of POD in seeds went down at 32.30%.The activity of CAT in seeds kept stably during the after-ripening period but on the fifth day(243.25μmol/min).The activities of SOD and POD in seeds were higher than those of in flesh.The activity of CAT in seeds and flesh made no significant difference.
