Determination of Nutritional Ingredients of Potentilla anserine

Objective To determine the nutritional ingredients of Potentilla anserine.Methods The ingredients in Potentilla anserine,including calcium,iron,magnesium,fosforus,zinc,iodine,potassium,water,ash,total reducing sugars,protein,crude fat,vitamin A,vitamin B1,vitamin B2 and vitamin C,were determined by EDTA(Ethylenediamine tetraacetic acidt)itration method,Kjeldah method,Soxhlet extraction method and other na-tional standard methods.Results The contents of potassium,magnesium,protein,total reducing sugars,vitamin C,vitamin B1 were 655μg/g,9.16μg/g,10.06 g/100 g,9.78 g/100 g,3.88 g/100 g and 1.45 g/100 g,respectively.The contents of nutritional ingredients were also high.Conclusion Potentilla anserine possesses higher nutritional value,edible value and healthcare function,so it can be used as a food resource and a Chinese herbal medicine.
