Application of pullulanase in food industry

ZHOU Nian-bo SUN Jie WANG Jing WEI Bing-zhuo (Department of Bioengineering,Wuhan Bioengineering Institute,Wuhan 430415 ,China)  
Pullulanase is a kind of debranching enzyme which hydrolyze α-1,6-glucoside linkages in amylopectin. This paper summarized respectively the use of pullulanase in food industry,including the uses in glucose syrup,extremely high malt syrup,beer and modified starch.
