Present Situation and Prospect on Study of Dietary Fiber

The studies on dietary fiber (DF) in home and abroad vvere introduced systematically. They involve characteristics, structure, physiolugical functions, resource exploitation,extraction methods, utilization in food processing of DF. Three aspects should be considered inorder to further exploit DF, they were the expansion of resource realm the studies of extraction and modification methods and the exetersion of DF utility realm.
